We love just about everything about Marble, Colorado. The mountains are majestic, the history is rich and nestled in the heart of the little mining town is one of our favorite places to eat, Slow Groovin BBQ. In addition to their regular plates of scrumptious Q, Slow Groovin hosts special events where they go off menu and let their culinary talents fly. We’ve enjoyed evenings of whole roasted hog and craft beer pairings. One night this fall they served the best pumpkin soup I’ve ever tasted. They generously shared their secret:
GF DF Pumpkin Soup
Sauté onion and garlic in olive oil (about 3 tsp) until translucent. Add remaining ingredients and bring to simmer. Let cool. Puree soup in blender. Pour soup back into pot and reheat on low to medium setting, stirring constantly to prevent burning. Ladle soup into individual bowls. Top with sautéed kale if desired. Guaranteed to warm every tummy.
Slow Groovin will close for the winter. Their last day this season is October 31st, and they’ll go out with a bang. Dress up as your favorite super skier and join them for their closing party on Halloween.
